Why it works: The heat from the freshly cooked noodles and hot broth gently cooks the egg and cheese, creating a rich, creamy sauce without scrambling. Crispy bacon bits add a salty, umami depth, and a sprinkle of black pepper ties all the decadent flavors together.
Crispy Bacon: In a small pan, cook the chopped bacon over medium heat until crispy. Remove the bacon bits with a slotted spoon and set aside on a paper towel-lined plate. Leave about 1 tablespoon of bacon fat in the pan (or discard if you prefer less fat).

Stir vigorously and continuously for about 30 seconds to 1 minute. The residual heat from the noodles and remaining water will cook the egg into a creamy sauce that coats the noodles – do not return to direct heat, or the egg will scramble!
Assemble & Serve: Pour the carbonara ramen into your serving bowl. Top generously with the crispy bacon bits and a good grinding of fresh black pepper.
