Why You'll Love This Upgrade

Shrimp and Dashi Instant Ramen Recipe

Overview

This Shrimp and Dashi Instant Ramen recipe transforms everyday instant noodles into a deeply savory, restaurant-quality bowl using classic Japanese dashi and simple ingredients. Designed for speed without sacrificing flavor, this recipe highlights how instant ramen can be elevated with umami-rich broth, tender shrimp, and clean aromatics in under 20 minutes.

If you love instant ramen but want something lighter than tonkotsu and more complex than standard seasoning packets, this is a perfect place to start.

Why This Instant Ramen Recipe Works

Dashi is the backbone of Japanese cooking for a reason. Made from kombu and bonito, it delivers layered umami without heaviness, allowing the noodles and toppings to shine. When paired with shrimp, the broth gains natural sweetness that complements instant ramen’s savory base rather than overpowering it.

This recipe focuses on balance:

  • Clean, savory broth

  • Light seafood sweetness

  • Minimal ingredients

  • Maximum flavor payoff

It’s an ideal instant ramen upgrade for weeknight meals, casual hosting, or anyone curious about Japanese flavor fundamentals.

Tips for Customizing This Instant Ramen Recipe

  • Make it richer: Add a splash of soy sauce or a few drops of sesame oil.

  • Add heat: Chili oil or shichimi togarashi pairs well with shrimp.

  • Boost protein: Add a soft-boiled egg or extra shrimp.

  • Keep it light: Skip the seasoning packet and rely fully on dashi.

This recipe also scales well, making it easy to cook for one or double for sharing.

  • The shrimp flavor reinforces the seafood notes in the broth

  • The seasoning adds depth without overpowering the dashi

  • The noodles hold up well when simmered, making them ideal for upgraded instant ramen recipes

Ingredients

  • 1 pack of Koreno Shrimp Instant Ramen
  • 2 cups water
  • 1 tsp Mirin
  • 1 tsp Dashi Powder
  • 1 tsp Sesame oil
  • 1tbs Chili oil
  • 1 tbs Soy Sauce
  • 1 diced green onion
  • 1 Lemon
  • 1 head of baby bok choy
  • 1 sheet of Nori
  • 1 soft boiled egg
  • 5-8 medium shrimp
  • 2 cloves of fresh garlic
  • ½ tsp salt
  • ½ tsp black pepper

Directions

  1. Begin by boiling a small pot of water. Once boiling, place your egg into the water for 6.5-7 minutes and then place promptly into an ice bath.
  2. While your water boils, begin prepping your vegetables. You will mince the garlic, chop the green onion, roll and half the lemon, remove the base from the bok choy, slice small strips of nori, and peel/devein the raw shrimp.
  3. Once you have prepped your ingredient, begin bringing 2 cups of water to a boil. While that comes to heat, bring your pan to medium heat and add half of your minced garlic.
  4. Once your garlic is aromatic, add your shrimp seasoning both sides with salt and pepper until cooked.
  5. Once your water is boiling, place your bok choy into the pot for roughly 30-45 seconds and then remove.
  6. Season water with the included spice packet from your ramen, 1 tsp of dashi powder, 1 tsp of sesame oil, 1 tsp mirin, and 1 tbs of soy sauce.
  7. After allowing this to combine, place your ramen into the water for 2-5 minutes and remove from heat.
  8. Finally, place everything in your bowl, top with 1 tbs of chili oil, and enjoy.
