Quick Beef and Veggie Instant Ramen is a balanced instant ramen recipe designed for fast, filling meals. Beef, vegetables, and savory broth elevate instant noodles into a wholesome ramen bowl perfect for busy weeknights.

Ingredients

1 Pack Instant Ramen Noodles (Nongshim Shin Ramyun)
½ Pound Thinly Sliced Beef ((shabu-shabu style)
1 Pack Enoki Mushrooms, Rinsed and Trimmed
Small Bunch Shungiku (Ton Hao), Rinse and Cut (substitute with leafy greens as needed)

Toppings

Half a hard-boiled egg
Pinch of chopped green onions
Pinch of toasted sesame seeds
White pepper to taste

Dressing

Few Drops of Sesame oil
Few Drops of Vinegar

Directions

Bring 2.5 cups of water to a boil. Add instant noodles, soup base, and mix vegetables from the package.
Place enoki mushrooms, shungiku, and thinly sliced beef on top of the noodles.
Once the water starts to boil again, cover the pot with a lid. Let it simmer for 4-5 minutes over medium heat, stirring occasionally.
Remove from heat and carefully transfer to a large bowl.
Add half a boiled egg, sprinkle with toasted sesame seeds, chopped green onion, and drizzle with sesame oil and vinegar to serve.

Recipe Note

Thinly sliced beef for shabu-shabu can be found at most Japanese grocery stores or ask the butcher to cut it for you.
Enoki mushrooms and shungiku are available at Asian grocery stores. Feel free to substitute with other mushrooms or leafy greens of your choice.
Nongshim Shin Ramyun adds a spicy kick, so choose another type of instant ramen if you prefer a milder flavor
