Ingredients

  • 1 Nissin Raoh Miso Ramen Package
  • 4 Slices Chopped Bacon
  • 1-inch Piece Fresh Ginger, peeled and sliced
  • 3 Garlic Cloves, sliced
  • 1 Tablespoon Lemongrass, minced (jarred lemongrass in water works too)
  • Red Pepper Flakes, to taste
  • ½ Teaspoon Balsamic Vinegar
  • ½ Teaspoon Rice Wine Vinegar
  • 2 Tablespoons Toasted Sesame Oil
  • 2 cups Ramen Noodles
  • 2 Cups Baby Spinach Leaves, stemmed and chopped
  • 1 Shallot, thinly sliced
  • Soft-boiled or poached egg (1 per person)
  • Scallions, chopped
  • Sriracha Hot Sauce (optional)

Directions

  1. Render chopped bacon until crispy. Remove bacon and set aside.
  2. In bacon drippings, sauté ginger, garlic, and lemongrass for 1 minute. Add red pepper flakes and 2 cups of water. Bring to a simmer.
  3. Discard aromatics (garlic, ginger, lemongrass).
  4. Add sauce pack, vinegars, and toasted sesame oil. Keep warm until ready to serve.
