Ingredients

1 Package Mama Shrimp Creamy Tom Yum

2 inch Piece of Ginger (sliced into 6 pieces)

6-8 Kaffir Lime Leaves (see notes)

3 Tablespoons Lemongrass Paste (see notes)

6 Ounces Mushrooms, sliced

3 Tablespoons Roasted Thai Chili Paste

3 Tablespoons Fish Sauce

2 Roma Tomatoes, sliced

½ Red Bell Pepper, sliced

12 Ounces Raw Shrimp, cleaned

2 Tablespoons Chopped Cilantro
-
2-4 Tablespoons Fresh Lime Juice

Ramen Noodles, cooked
Directions
Simmer
Add the broth ingredients along with2 cups of water to a pot and simmer over medium heat 10-15 minutes.
Remove the lime leaves and ginger
Add
Add mushrooms, Thai chili paste, tomatoes, red bell peppers, and fish sauce. Cook for 5 minutes
Add the cleaned shrimp to the pot.
Turn off the stove when the shrimp is cooked and the broth is hot. Stir in cilantro and add 2 tablespoons of lime juice. Add more to fit your taste.
Serve
Add noodles to a large bowl and top with prepared Tom Yum Soup.
Top with soft-boiled eggs, sliced lime wedges, sliced red peppers, additional cilantro, and anything else you’d like to add to your ramen bowl.
