  • 1 tablespoon scallion and 1/2 teaspoon oil Scallion and toasted sesame oil
  • 1/2 teaspoon, optional Neutral oil or packet oil, if included
  • 1/4 teaspoon, optional Lime or vinegar

  2. 1 tablespoon scallion and 1/2 teaspoon oil scallion and toasted sesame oil changes contrast quickly. It gives the bowl a sharper edge while the base seasoning remains the main flavor.
  3. Cook the noodles until flexible, then reserve 3 tablespoons of the starchy cooking water before draining. That water helps the sauce stretch and cling, but it has to be added slowly. Add 1 tablespoon scallion and 1/2 teaspoon oil scallion and toasted sesame oil after the sauce has begun to coat, so the finish changes the bowl without interrupting the sauce.
