  • 700 ml for boiling, with 3 tablespoons reserved before draining Water
  • 85 g Cooked chicken, tofu, or sliced beef
  • 1/2 teaspoon, optional Neutral oil or packet oil, if included
  • 1/4 teaspoon, optional Lime or vinegar

  2. 85 g cooked chicken, tofu, or sliced beef changes the bowl by giving it weight. It should catch the seasoning and become part of the eating structure, not sit above the noodles as a separate topping.
  3. Cook the noodles until flexible, then reserve 3 tablespoons of the starchy cooking water before draining. That water helps the sauce stretch and cling, but it has to be added slowly. Add 85 g cooked chicken, tofu, or sliced beef after the sauce has begun to coat, so the finish changes the bowl without interrupting the sauce.
