- Start with 500 ml, plus up to 40 ml for adjustment and keep the adjustment water separate. Cook until the noodles are hydrated but still have structure, then taste the broth after the seasoning dissolves. Add 1 tablespoon scallion greens, thinly sliced late, where it can affect aroma and texture without being boiled into the background.
