  • 500 ml, plus up to 40 ml for adjustment Water
  • 60 ml, held back at first Reserved hot water
  • 1/2 teaspoon, optional Toasted sesame oil or neutral oil
  • 1/4 teaspoon, optional Lime or vinegar

  3. Start with 500 ml, plus up to 40 ml for adjustment and keep the adjustment water separate. Cook until the noodles are hydrated but still have structure, then taste the broth after the seasoning dissolves. Taste before adding the held-back water, then adjust gradually.
  4. Success tastes concentrated but not harsh, with broth that carries the seasoning clearly and noodles that still keep their shape.
